Amazing picnic potato scones



There are various recipes floating around on diet forums, but this is the one I used:
Makes 8 scones:
  • 1 packet of dried potato (eg ‘Smash’- although I made this with an Italian version as we were away staying with family)
  • 3 eggs
  • 1 tub low fat cottage cheese
  • sprinkle of chilli flakes (to taste)
  • 1 cal spray oil
Directions:
  1. Pre-heat oven to 180 degrees
  2. Beat the eggs in a bowl.
  3. Mix in the tub of cottage cheese and sprinkle in around a tsp of chilli flakes
  4. Add the packet of dried potato and mix.
  5. At this stage you should have a ‘dough’ that is slightly wet but mouldable. I had to actually add another 1/4 of a packet of potato as my mix was too wet – unfortunately my recipe didn’t have weights, so it could be that the Italian mix was a smaller packet that British/US mixes.
  6. Gather the dough and portion in to 8 equal pieces.
  7. Shape into ‘scone’ shapes – I made mine 1.5 inches thick.
  8. (you could flatten the dough out and cut out using cutters, but we didn’t have any as we were on holiday, and this method worked just fine).
  9. Spray a baking tray with spray oil
  10. Put ‘scones’ onto the tray, and bake in the oven for around 15-20 mins, or until golden brown.
  11. Allow to cool.

How long does a journey take, if you have to stop and recharge every 125 miles. That's two recharges between here and London or North Wales or Yorkshire or The Lake District and four to get to Fort William so turning a 12 hour journey into a 16 hour journey! Who wants to be doing that!!! It's a shopping trolley! No more no less and a very expensive and wasteful use of manufacturing capacity and materials.

Is there any substitute for the cottage cheese as I do not like it but love the idea of these scones.
